Succatash Recipe
This is a good mexican succatash recipe I found. It has been tweaked to perfection.
Ingredients:
olive oil
fresh tomatos
garlic
sea salt and pepper
summer squash
yellow squash
Zucchini squash
Corn cut off the cob
potatoes
onion
green pepper.
Directions:
Slice all veggies to the same thickness. Heat oil and garlic and then throw the rest of the veggies in a big skillet (a dutch oven works well. When the potatoes are ready, then serve. Accompany this with tortillas and veggie bean chilli and you have a meal fit for a king. MMM. Tastes good and very colorful too. The secret ingredient is the fresh tomatoes. Home canned tomatoes are the best, but store bought will work just as well.
